I’m always on the lookout for a new recipe to try on my family at our holiday get togethers. We have wonderful customers who are very willing to share their latest recipe and many become my new favorites. But, along with the new, I do have a couple of recipes my family looks forward to each Thanksgiving. I thought that I would share one of those recipes, one that is quick and easy to prepare and of course, delicious.
Cranberries and Yams
1/2 cup flour
1/2 cup packed brown sugar
1/2 cup oatmeal (uncooked)
1 tsp cinnamon
Cut 1/3 cup margarine into the above ingredients until the mixture resembles coarse crumbs.
Toss 1 cup crumb mixture with 2-17 oz cans of drained yams and 2 cups fresh cranberries.
Place in 1-1/2 qt casserole.
Top mixture with remaining crumbs.
Bake 350 degrees for 35 minutes.
Sprinkle with 1-1/2 cups miniature marshmallows.
Broil until marshmallows are lightly browned.
